pulled pork sandwichRoot Beer Pulled Pork

2 lb pork tenderloins
12 oz root beer (Dorothy Molter of course!)
1 cup of your favorite BBQ sauce
1 tsp Kosher salt
1/4 tsp pepper

Set pork aside.  Mix all other ingredients in your slow cooker.  Add pork tenderloin.  Heat on low for 6-8 hours.  Shred pork with 2 forks.  Serve on a bun with your favorite coleslaw, pickles or more BBQ sauce.

Cheddar Island Biscuits

  • 2 Cups Bisquick
  • 2/3 Cup Milk
  • 1/2 Cup Shredded Cheese
  • 1/2 Tsp. Garlic Powder
  • 1/2 Tsp. Parsley
  • 1/4 Cup Butter

Heat oven to 450 degrees. Combine Bisquick, cheese, garlic powder and milk. Drop mixed batter onto covered (tinfoil or parchment paper) cookie sheet and bake for 8-10 minutes. While baking, mix together melted butter and parsley. Brush mixture onto baked biscuits. Sprinkle with garlic salt if desired.

Chipotle Turkey Burgers (Makes 4 Burgers)

  • 1 1/4 Lean Ground Turkey
  • 1 Egg Lightly Beaten
  • 1/4 Cup Diced Onions
  • 1 Tsp. Ground Cumin
  • 1 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 4 Oz. Shredded or Grated Sharp Cheddar Cheese
  • 2 Tsp. Chipotle Seasoning (add more to season to taste)

Set aside the cheese. Mix all other ingredients together completely. Divide the mixture into 4 equal servings. Grill the burgers approximately 5 minutes each side. Sprinkle equal portions onto the burgers after flipping.

Catch of the Day with Fennel and Olives

  • 2 Tbls. Olive Oil
  • 2/3 Chopped Kalamata Olives
  • 2 Tbls. Capers
  • 1 Minced Garlic Clove
  • 1 Tsp. Thyme
  • Crushed Red Pepper Flakes (1/4 Tsp. to 1/2 Tsp.)
  • 1 Tsp. Fennel
  • 4 Fish Fillets
  • 1/4 White Wine

Mix olive oil, olives, garlic, thyme and red pepper flakes in a small bowl. Prepare 4 squares of tinfoil (large enough to hold and wrap your fillets) by brushing lightly with olive oil or cooking spray. Sprinkle foil with fennel and top with fillets. Spoon 1/4 of the olive mixture over the fillets. Fold the sides of the tin foil up. Drizzle 1/4 of the wine over each fillet and seal the foil packets, leaving room for the heat and steam to circulate. Place packet on the grill, 15 to 20 minutes or until cooked through.

Black Bean Burgers--Vegitarian Style

  • 1 Can of Black Beans
  • 2 Tbsps. Ketchup or Exchange 1 Tbsp with Hot Sauce
  • 1 Tbsp. Mustard
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder or a Generous Pinch of Dried Onion Bits
  • 1/3 Instant Oats

Heat oven or Grill to 400 degrees. Combine all ingredients in bowl and hand mix. Split mixture into 4 sections and form burgers. Grill for approximately 7 minutes or until crispy.

Chicken Kabobs with Spicy Peanut Sauce

1 1/2 Lbs.
Chicken Breasts
Cut to 1" Pieces
Marinate the chicken in 2 Tsp. of fresh ginger, the juice of 2 limes and a dash of salt and pepper for 1 to 24 hours.

Variations: Beef or shrimp instead of chicken.

Spicy Peanut Dipping Sauce (mix all together and combine well)

  • 1/2 Cup Peanut Sauce
  • 1/4 Cup Soy Sauce
  • 2 Tbls. Sugar
  • 2 Tbls Sesame Oil
  • 3 Tbls. Rice Vinegar
  • 1.4+ Tsp. Cayenne
  • 1/4 Cup Water

Thread marinated chicken on 4 skewers. Thread your favorite veggies (tomatoes, peppers, mushrooms, zuchinni, etc.). Place skewers over medium-high grill heat. Cook 6 to 7 minutes per side or until cooked through.

Grilled Chicken with Garlic-Herb Butter

  • 2 Chicken (3 to 4 Pounds) Halves
  • Salt and Pepper

Garlic-Herb Butter
(mix all together and combine well)

  • 1/2 Cup Soft Butter
  • 1.5 Tsp Salt
  • 1 Tsp Red Pepper Flakes
  • 4 Minced Garlic Cloves
  • 1 Tbs. Rosemary

Rinse chicken well, pat dry and sprinkle with salt and pepper to taste. Gently loosen the skin of the breast pieces and spread 2 or 3 Tbs. of the Garlic-Herb mix under the skin. Spread another Tbs. of the mixture over the outside of the chicken. Grill the chicken over medium heat (bones down first) for 8 to 10 minutes, baste the chicken with the Garlic-Herb mixture and turn over. Repeat process again, every 10 minutes until chicken is cooked.
